So you know two weeks ago I did the Daniel’s Fast where I almost died. I ate a lot of beans, fruits, and vegetables. In fact, I ate so much of the stuff I didn’t want anything else besides…dare I say it…healthy foods. I had to get creative in my food making capabilities in order to survive. SO! I researched and researched and talked to my vegetarian friends and they both gave me the idea of making potato and kale enchiladas. I must admit, the first time I heard the idea, I thought, “yuck”! However, it turned out to be quite satisfying. In fact, my boyfriend even enjoyed them; and if he likes them then I know they must be a winner. You don’t have to be a vegetarian, vegan, or extremely healthy eater to enjoy this meal. They are really good.
