They say the third time is the charm….they were right!
Okay, so I have done this clean eating thing and working out more than normal for 2 weeks now. What I love about eating healthier is the way I feel physically. I love not feeling weighed down, feeling sluggish, or heavy. I love feeling…clean. Do you know what I mean? It feels good to eat food that you body loves and absorbs well. Hoooooowever, there is nothing wrong with the other stuff…you know…the real good stuff like nachos, burger, cakes, cookies, and pies. That stuff should be consumed and enjoyed. Hey, I love the stuff just as much as anyone else. But if you are willing to explore different ingredients that are a bit healthier but can still taste as good, I promise, living and eating healthy can really coexist. Just like the words healthy and pancakes can be in harmony within the same sentence.
Early in this post I said “third time is the charm”. It took me 3 times to make these pancakes and enjoy them. The first time I made them….let’s just say that I am happy to be alive. The second time I made them I really enjoyed them but I thought they were still a bit gritty. Edible, yet gritty. The third and last time I made them I added some whole grain flour to smooth out the texture; I added some vanilla extract for flavor; and added a bit more egg whites so the mixture wouldn’t be too thick. Perfect! Now, there is a bit of grit but it isn’t anything overwhelming and really tastes awesome. I am so proud of myself. However, I have to thank Sophie Beya, my motivation and fitness coach, for giving me the blueprint for these pancakes.
PAUSE FOR CAUSE: I have known Sophie for about 7 years now. We met during a church spiritual journey called “Reset” and have been cool ever since. Now, back to these pancakes. You should eat them. Done.
Just kidding. These pancakes are packed with protein and fiber. I used Bob’s Red Mill Oat Bran and Whole Wheat Pancake mix. You don’t have to use this particular bran, but I highly recommend it and it’s not because I am being compensated to do so. I really love this brand! However, if you don’t have access to this brand you can use a comparable brand that you like. Just to show you why I love this brand so much, let’s talk about the nutrition qualities that is in their products that I used for this recipe:Not bad right?! IF that isn’t enough for you both of these products are packed with calcium and iron, which is perfect for people like me who are anemic I am telling you that I had two of these the other day and I was not hungry for more than 4 hours! Seriously. I was feeling full for a long time. So much so that I wanted to be hungry so I could eat a snack or something. I think if you have a busy day ahead of you or you know you will be faced with temptation at work or elsewhere, eat these in the morning and your appetite will definitely be suppressed. Also, if you have a day with your kids, feeding them these pancakes before you guys get started may suppress their appetite too, which will make you happier in the long run. In either case you can’t go wrong with these pancakes. They are delicious and super nutritious. I promise you will thank me.

Description
This pancakes are packed with protein and fiber and only requires one thing…a food processor. Just top off with favorite fruit and maple syrup and you have yourself an awesome breakfast.
Ingredients
- 1 c. Oat Bran
- 1 c. Whole Grain Pancake Mix
- 1 tbsp. flax meal
- 2 tbsp. protein powder (vanilla or plain)
- 1/2 banana
- 2 tbsp. honey
- 1 tsp. vanilla extract
- 1 1/4 c. egg whites
- pinch of salt
- butter for frying
- fruit for topping
Instructions
- Using a food processor, combine all ingredients (oat bran, whole grain pancake mix, flax meal, protein powder, banana, honey, vanilla extract, egg white, and pinch of salt). Pulse until well combined and smooth, about 1 minute.
- *If you do not have a food processor you can use a blender.
- Heat a griddle or pan on medium heat and add a tablespoon of butter. Once the butter has melted, pour 1/4 cup of pancake batter on griddle and use the back of a spoon to widen the circle of the pancake by moving in a circular motion onto the pancake batter. Allow to cook until bubbles begin to form along the edges and the middle of the pancake and flip onto the other side to finish cooking, another minute. Repeat until all batter is used. Top with desired fruit and enjoy!
