I hope all of you had a Happy Holiday and New Year! I took a much needed mental break and did nothing. I blogged about nothing, I thought about nothing, and I tried to do nothing but I wasn’t successful in that part of my nothing quest because I have a one-year-old that won’t quit. Like literally, he won’t quit doing anything. My patience is definitely getting tested for this kid. I mean, I sometimes do not know what to do. Argh, and now he is going through this sleep anxiety at night. It is exhausting. I mean he was sleeping so well and suddenly, it stopped. I mean him sleeping through the night has literally STOPPED. Anyway, this is not what this post is about. You are curious about my Thick and Hearty Easy Vegetarian Chili. So, let’s talk about that.
So, I am going to be honest with you. Since the time I was pregnant until…now, I have worked out maybe 20 times and I am being generous. First of all, I had the worst case of morning sickness and fatigue. Well, maybe not the worst but it was pretty terrible. I didn’t want to do anything but sleep. That includes eating. Then, I had to eat pretty strict because I had gestational diabetes, so there’s that. Oh, then I had the kid and we all know how that story goes. No sleep, breastfeeding every 2-3 hours, and just things that I didn’t understand about raising a person. It takes a lot out of a person. Yeah, workout? Eat right? Two words….YEAH RIGHT! I mean I don’t know how moms do it. How in the hell do you raise a child or multiple children, workout, meal prep, eat right, have a girls night, and still manage to have sick on a regular basis while having your legs shaved and hair done. I haven’t had a pedicure since last April and my hair hasn’t been touched professionally since, August. I just don’t have the time and I don’t have the energy. But this year that is changing.
I am definitely getting myself back on track with eating right and working out. But, I am going to 2018 with the mindset of giving myself grace as I get back on track. I am not going to go crazy with ridiculous goals of working out 5 days a week. I said I can do 3, which I believe is manageable. I will do two days of yoga and one day of low impact cardio. Just to get my body moving again and to stretch my body and I will build on top of that if I decide to do it. As far as eating right, I will take things meal by meal. But the first thing I am going to do, which what I was doing before I became a mom, is do a food detox where I eat no sugar, no fried foods, no fast food, and other foods that are considered bad for you. Eating this Thick and Hearty Easy Vegetarian Chili is apart of that process. It is full of veggies and fiber and absolutely delicious.
I know what some of you are thinking, “Vegetarian? Chili? No meat? Why?”. I don’t have an answer for you as to why, but what I can tell you is that it is insanely good and even the most notorious carnivore would fall in love with this chili. I consider myself to be a part-time vegetarian. I enjoy going weeks without eating meat because it just gives my body a break and I feel great afterward. My intestine feels clear and clean and I have more energy, which I need these days. You can still enjoy this with vegetarian cheese (I recommend Diya), tortilla chips, cilantro, and plain greek yogurt. As far as the meatless crumbles, I recommend using the brand Beyond Meat Crumbles. I am not getting paid to say that, I really love this brand. Morning Star and Boca are good brands for meatless crumbles too. The reason I like Beyond Meat Crumbles is that it tastes really meaty.
Feel free to add whatever veggies you like! You can add carrots, squash, various peppers, or whatever you like. If you are having trouble eating your veggies or having your kids eat their veggies, this is a perfect dish where you can hide veggies so they aren’t that painful to eat for you or your kids. Enjoy this chili recipe during a cold day. This Thick and Hearty Easy Vegetarian Chili recipe is perfect for meat-eaters, vegans, and vegetarians.
Ingredients
- 2 tbsp. olive oil
- 1 medium onion, peeled and diced
- 3 garlic cloves, minced
- ½ c. green peppers
- 4 Roma Tomatoes, diced
- 10 oz. meatless crumbles
- 2 tbsp. Worcestershire Sauce
- 1 Zucchini, diced
- 6 oz. Tomato Paste
- 15 oz. Hot Chili Beans
- 15 oz. Tomato Sauce
- 15 oz. Sweet Corn
- 15 oz. Black Beans, rinsed and drained
- 1 c. water
- 1.25 oz. chili flavor
- 2 tsp. onion powder
- 2 tsp. garlic powder
- salt and pepper to taste
Instructions
- In a large sauce pot on medium-high heat, add the olive oil. Once heated, add the chopped onion, peppers, and cook for 3-5 minutes until the onions are soft and translucent. Add the garlic and zucchini and cook for an additional 5 minutes.
- Add the Roma tomatoes and meatless crumbles. Stir in with the rest of the veggies. Add the Worcestershire sauce and tomato paste. Stir the ingredients. Add the chili beans, tomato sauce, sweet corn, black beans, and water. Stir together. Add the chili flavor, onion and garlic powder, and salt and pepper to taste. Turn the heat on simmer to low and cook for, at least 30 minutes.

Do you have any idea how Worcestershire sauce is made and/or what one of the main ingredients is? Vegetarians will not be happy when they find out (I know I wasn’t, but neither were my meat-eating family members). Thanks.

I Just made the meatballs (without the sauce\pasta) and they are delicious! I used butter beans as that’s all I had and swapped the liquid smoke with smoked paprika. Even my meat eating family enjoyed them😊
