I do not like dark chocolate. There I said it. It is disgusting to me and I don’t see how people actually enjoy dark chocolate. I bought 4 bars of Dark Chocolate determined to make something great out of it. What better way to take chocolate and put it in a cake?! I made a Dark Chocolate Cake with chocolate from Divine and yogurt from Stonyfield! Oh yea, I like to add yogurt to all my cakes for extra moistness. If you have not done that, you really need to try it sometime. Let me tell you about this Dark Chocolate Cake Recipe, it is the bomb. To be honest, I am not a huge fan of chocolate cake. I don’t know what it is but they are not very moist. They are typically dry and dull. The best part of any chocolate cake for me is the icing and I am not a huge icing person, so that should tell you something. This cake is really delicious. The key is that I didn’t bake it that long. I put the cake on the top rack in my oven and baked it for 20-25 minutes. I mean as soon as that knife came out clean, I took it out. With any cake, if you bake it for too long it can become a bit dry. So make sure when you are baking this cake that you check the cake at 20 minutes and every 2 minutes after that to make sure that you are getting it out of the oven at the right time.

Ingredients
- 1 c. unsweetened cocoa
- 1 c. flour
- 1 ½ tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 2 c. sugar
- 3 eggs
- 2 tsp. vanilla extract
- 1 ¼ c. buttermilk
- ½ c. vegetable oil
- 1 c. Stonyfield plain greek yogurt
- 7 oz. Divine Dark Chocolate, melted
- ICING
- 1 stick butter, softened
- 6 c. powdered sugar
- 1 tsp. salt
- ¼ c. heavy cream
- 7 oz. Divine Dark Chocolate, melted
Instructions
- Preheat oven to 350 Degrees and spray heavily or line two 9 inch round cake pans and set aside.
- In a large bowl, sift together the cocoa, flour, baking powder, baking soda, and salt. In another large bowl, mix the sugar, eggs and vanilla extract; add the buttermilk and oil.
- One cup at a time, begin to add the dry ingredients to the wet ingredients make sure each cup is well mixed before adding the next cup. Once the dry ingredients have been added to the wet ingredients, add the melted chocolate and stir until well mixed. Finally add the yogurt and stir.
- Pour even distributions of cake batter into the cake pans. Bake on the top oven rack for 20-25 minutes. Once finished, allow to cool for 5-10 minutes and turn to cooling rack and allow to completely cool.
- To make the icing, blend the butter in a large bowl until creamy. Add the powdered sugar 1 cup at a time while adding 1 tbsp. of cream in between. If the icing isn’t as creamy as you prefer add 1 tbsp. of cream at a time until desired consistency is reached. Add the melted chocolate and mix until well blended and creamy. Frost the cake as desired.
