I must warn you, these Mississippi Mud Brownies are “mud good”.
If you like chocolate and love brownies, you will absolutely adore these Mississippi Mud Brownies.
Do you know where the term “Mississippi Mud Brownies” came from? Good, neither do I. So we all know where this term comes from, I took the liberty and looked it up. Well, clearly the term did come from Mississippi. Duh, right? According to Wikipedia, the density of the traditional Mississippi Mud Pie comes from the way the pie resembles the mud banks of the Mississippi River. I guess that makes sense seeing how these brownies are seriously dense and ridiculously gooey. I mean it makes no sense how chocolate these Mississippi Mud Brownies are. Oh, and did I mention this recipe starts off with Brownie Mix from a box?
Yes. I am a food blogger, but I am also a realist. So, if I am being real I understand all too well how difficult it is to make everything you consume from scratch. I would say about 85% of the dishes I make is from scratch, but there are the 15% of the things I make is made with a little “help”. No one has enough time to make every meal from scratch three times a day. If you do, please tell me how you do it. But for most of us, we need a little help every now and then. That is why there is no shame in my game of sharing delicious desserts that are made from a box or some other pre-made ingredients. We are going to start with these Mississippi Mud Brownies.
I have been dying to make these brownies for quite some time, to be honest. However, the recipe I have for Mississippi Mud Brownies are completely for scratch and seems to take a lot of time. As I was reading through the recipe I was thinking, “There has to be an easier way to make these!” Well once I really allowed myself to start thinking about it, the solution came easy! The easiest adjustment I can make is to use my favorite box brownie mix for the brownie part, add a bag of marshmallows, and drizzle the frosting as normal. There you have it! Mississippi Mud Brownies in yo face! Now I must warn you if you are a person who LOVES rich, chocolatey, and sweet desserts you will enjoy these brownies. They are delicious but I could only eat about a half of a brownie at a time. But damn it if I don’t keep going back for more.
Frosting Recipe adapted from Tastes Better From Scratch

Description
These Mississippi Mud Brownies are super chocolaty, gooey, and rich. This is for the chocolate lovers at heart! Brownies topped with marshmallow and chocolate frosting.
Ingredients
- 1 Box of Brownie Mix (including the required ingredients egg, water, and oil)
- 16 oz. Marshmallows
- Frosting
- 1 stick unsalted butter
- 3 tbsp unsweetened cocoa powder
- 6 tbsp. milk
- 1 tsp. Vanilla extract
- 3 c. powdered sugar
- Pinch of salt
Instructions
- Preheat oven to 350 Degrees and spray a 9X13 casserole dish with baking spray and set aside.
- Using a large bowl, prepare the brownie mix as instructed using the correct amount of water, oil, and eggs. Pour in the sprayed 9X13 casserole dish. Bake for 20-25 minutes until the middle of the brownies are baked through.
- While the brownies are baking prepare the frosting. In a medium saucepan melt the stick of butter, add the cocoa powder, and milk. Allow
to come to a slight simmer. Remove from heat and whisk in the powdered sugar until smooth. Add the salt and vanilla extract. - Once the brownies are finished baking, add the marshmallows on top of the brownies while still warm, and pour on top of the marshmallows. Place back in the oven for 2-3 minutes until marshmallows are gooey and slightly puffed. Remove from oven and pour the frosting mixture on top of the marshmallows. NOTE: You may not need to use the entire frosting mixture as I did not. Place in the refrigerator for 30 minutes or longer to allow the frosting to set. Cut into squares and serve.
