Pizza Pasta Bake
I hate cooking on Friday’s. Only Friday’s.
Pizza and Pasta makes for Pizza Pasta Bake.
I don’t know if it’s by Friday my mind is tired and knows that it is going to get two days off, but when Friday comes it is really tough for me to cook ANYTHING. There are a few reasons for this:
- I’m tired.
- I don’t have any ideas.
- I’m tired.
Sometimes, this…mentality can carry over into Saturday’s. I can cook breakfast on Saturday’s but dinner is not something I feel like messing with. If I do cook on Friday or Saturday’s you better believe it is something really basic and general such as hamburgers, tacos, or an easy crockpot meal. I’m talking basic. Nothing fancy or experimental. In fact, my husband does not look forward to eating dinner on these two days in particular, unless we go out to et. Why? He knows that whatever gets cooked is not going to be anything with love, just something to eat.
I once heard that you can train your brain to not only think differently, but to also instill new habits and eliminate bad ones. I have really been trying to do this more lately with certain characteristic traits that have been created by pure laziness. Let me tell you, it isn’t eat to try to get your mind of the habit of doing something that it is accustomed to doing. Where am I going with this? Well this past Friday my mind went into a place that it never goes on a Friday night. I actually felt like cooking! I mean like I actually felt like cooking. I didn’t cook a 5 course meal but I did cook something easy and still with love.
I found it to be stroke of genius to come up with the Pizza Pasta Bake dish. It only took me about 30 minutes or so to make this dish as most of the ingredients I already had in my home. All I had to add was the magical ingredient to bring everything together, which is love…and cheese. This dish was incredible and it made for great leftovers. In fact, the leftovers were better than the dish on the first day. I am telling you, if you are like me and you don’t really feel like cooking anything by the end of the week, this will be your saving grace. You will, at least, have a meal on Friday and Saturday because it makes great leftovers!

Description
This is a perfect weekend dinner meal that takes only minutes to make and are perfect for leftovers.
Ingredients
- 12 oz. Rotini Pasta
- 1 lb. Italian Sausage
- 6 oz. pepperoni
- 24 oz. Marinara Sauce
- 15 oz. Pizza Sauce
- 1 c. Grated Parmesan, divided
- 1 tbsp. Italian Seasoning
- 1 tsp. Red Crushed Pepper Flakes
- 2 tsp. Oregano leaves
- 16 oz. Fresh Mozzarella, divided
- 1 tsp. parsley flakes
Instructions
- Preheat oven to 350 Degrees. Spray 9X13 casserole dish with nonstick spray.
- In a large saute pan on medium heat, cook Italian Sausage until cooked through. Be sure to break the sausage into small pieces of meat. Take half of the peperoni from the package and slice in half and stir into the sausage.
- Fill large pot with water and cook pasta until al dente. Drain pasta and set aside. Inside the pot add sausage and pepperoni mixture, marinara sauce, pizza sauce, 1/2 cup of grated Parmesan, Italian seasoning, red crushed pepper, oregano, and salt and pepper to taste. Mix together.
- Mix about half of the mozzarella cheese with the pasta and pour inside the dish. Take the remaining pepperoni and lay it on top the pasta bake. Take the remaining Grated Parmesan and sprinkle on top along with the remainder mozzarella cheese. Finally, sprinkle the parsley leaves on top of the cheese and place in oven for 15-20 minutes until the cheese has melted. Allow to cool before serving.
