I have always straddled the line of picking a favorite pie between Sweet Potato Pie and Pumpkin Pie. No matter which pie you prefer, some of you are thinking that there is no contest Pumpkin Pie is the best or Sweet Potato Pie is the winner! I think it’s difficult because the textures and the spices are almost the same. So I get it. But I guess it depends on the mood I’m in and how that pie is. These two root vegetables seem to act like fraternal twins in the foodie world. But this Easy Pumpkin Cobbler Recipe definitely sets them apart.

Ingredients
- 3 eggs
- 1 c. sugar
- 15 oz. Pumpkin Puree
- ⅔ c. heavy cream
- 2 tsp. Pumpkin spice
- 1 tsp. Vanilla Extract
- 1 tsp. Salt
- TOPPING
- ⅓ c. light brown sugar
- ⅓ c. sugar
- 1 tsp. Cinnamon
- ¼ tsp. Salt
- 1 stick butter
- 1 ½ c. flour
Instructions
- Preheat oven to 375
- In a large bowl, blend together the eggs, sugar, pumpkin puree, heavy cream, pumpkin spice, vanilla extract, and salt. Use a handheld or standing mixer and blend the ingredients until well combined and smooth.
- In a separate bowl, add the brown sugar, sugar, cinnamon, salt, flour, and combine using a fork. Pour in the melted butter and combine using a fork. The mixture will begin to look crumbly.
- Pour the pumpkin mixture, in 9-10 inch cast iron skillet or similar casserole dish. Smooth the top. Sprinkle the crumble mixture on top of the pumpkin puree evenly. Bake for 35- 40 minutes.
- Allow to cool slightly and serve as desired.
