I love me a good cookie and FREE STUFF!!
I know you all are making fun holiday treats and cookies for your Cookie Exchanges and Christmas parties. Well add this cookie to your list! It has all the most important components of a cookie. Let’s see they’re moist, soft, and full of fun stuff like white chocolate chips, macadamia nuts, and dried cranberries. Who wouldn’t like that? I know I do. Here is the funny thing about these cookies. For the longest time, I didn’t like white chocolate. No, in fact I believe I couldn’t stand white chocolate. In my mind, chocolate wasn’t chocolate unless it was brown…..wait…I don’t mean that racially charge in any way. Chocolate can be white and still good. I think chocolate should come in all different colors. I believe there should be a rainbow of chocolate (Inner self: “Leave it alone Nicole”). Anyways, as far as the flavor of white chocolate, I couldn’t stand it. But this has changed rather recently.
You know how it is said that the older you become, your taste buds change? That is so true! I am starting to like a whole bunch of foods that I couldn’t stand as a kid and I am starting to not like some foods that I loved. For instance, the biggest change for me in terms of my taste buds is that I can’t take really rich or sweet desserts the way I use to. Heck, sometimes a Chocolate Chip Cookie can be a bit too sweet for me. If there is a dessert that has a bunch of toppings…like Banana Splits! I use to love Banana Splits. In fact, I use to love putting a whoooole bunch of stuff in my Banana Splits. Now, I can only do a banana, one scoop of ice cream, and one topping. That is all I can do now. I guess this is good considering things start to slow down and hang down the older you get, if you know what I am saying. None of this is neither here nor there with these cookies…oh wait…that was my point. I like white chocolate now. Yes.
When making cookies during any time of the year, you want to make the process as simple and clean as possible. - 1 stick unsalted butter, room temperature
- ½ c. sugar
- ½ c. lite brown sugar
- 1 tbsp. pure vanilla extract
- 1 egg
- ½ tsp. salt
- 1½ c. flour
- 1½ tsp. baking soda
- ½ tsp baking powder
- 1 tbsp. cornstarch
- 12 oz. white chocolate chips
- 1 c. dried cranberries
- ½ c. macadamia nuts chopped
- Preheat oven to 350 and line a baking sheet with Silipat Sheet or parchment paper.
- Cream the unsalted butter then add both sugars and mix until light and fluffy. Add the vanilla extract, egg, and salt and blend well. Beat in the flour, baking soda, baking powder, and corn starch. Fold in the white chocolate chips cranberries, and macadamia nuts.
- Place a tablespoon of cookie batter in the middle of each circle on the Silipat Sheet or an inch and a half apart on a baking sheet. Bake for 7-10 minutes. Allow to cool before transferring to a cooling rack.
