Do you remember a while ago I mentioned how I think Italian food is a form of soul food? Well, I didn’t lie. I love me some Italian food. In fact, my favorite part of eating Italian food is taking some bread and dunking it in my pasta sauce or using the bread as a mop to get all the incredible goodness off my plate or bowl. Mmmmmm….give me a minute I’m day dreaming here. Okay! I’m back. Italian food is another type of soul food to me! It’s heavy, it’s delicious, it’s unhealthy, and it’s absolute…delicious (oh wait, I already said that). However, these Mozzarella Stuffed Turkey Meatballs are a bit on the leaner side but with amazing flavor!
I love feeding people. You should know that better than anyone. Last week, my baby brother had some business to take care of here in Cincinnati. Anytime someone comes to visit me that doesn’t come around that often I must have something cooking. No one visits Nicole and goes home hungry. I think that is…blasphemy! I had to think of something good and quick and luckily I had some ground turkey thawed in my refrigerator so I thought I’d put it to good use. Good use was done! My brother loved these Cheesy Stuffed Turkey Meatballs. In fact, he said, “Dang sis! You sure do cook a lot better than you use to when we were growing up!” First off all let me say, I resent that statement. I don’t think I was that bad of a cook growing up. I just call them “growing pains”. Sure I burned toast, made brownies so hard they could be used as bricks, and burnt water (yes its possible). All of those mistakes made me what I am today…a good a** home cook :-).

Stuffed Turkey Meatballs

Description
If you need a quick meal to share with your family, this is it. Removing the red meat and making this classic Italian dish a little healthier little bit healthier.
Ingredients
- 1 lb. ground turkey
- 1 lb. turkey sausage
- 1 egg, lightly beaten
- 1 c. bread crumbs
- 1 tbsp. dried oregano
- 1 tbsp. dried basil leaves
- 2 medium shallots, chopped
- 2 cloves garlic, minced
- 1 c. Parmesan
reggiano cheese, shredded - 2 tsp. salt
- 2 tsp. pepper
- 12 cubes pieces of fresh mozzarella
- 3 tbsp. olive oil
- 26 oz. jar spaghetti sauce
- cooked pasta
Instructions
- In a large bowl, combine the ground turkey, egg,
bread crumbs , oregano, basil leaves, chopped onions, minced garlic cloves, Parmesanreggiano cheese, salt,an pepper. With your hands, mix all of the ingredients until all ingredients are well incorporated. - Divide the meat into 12 portions; take a piece of the mozzarella and shape the meat around the cheese until it forms into a tight ball and set aside. Repeat the same process until all meatballs are formed.
- Take a large saute pan and drizzle with the olive oil on medium heat, place each of the meatballs inside the pan. Allow
to cook for 6-7 minutes on each side. Pour in the spaghetti sauce and allow to simmer insauce for 20-25 minutes. Cover with lid. Serve over hot pasta.

Next time I will cut salt in half. I followed recipe exactly, and they were a little too salty. Otherwise very good taste.
