Kimmy sure does love her some Cookie Butter.
My dear friend Kim, that you all have heard me mention before, recently got married to a great guy. I was a bridesmaid in her wedding and not only that, I helped her make up a dance that she and her dad could perform at her wedding (it was so cute). When her parents got into town I went over her house to meet them for the first time and I could immediately see where Kim got her kind and loving spirit from. When I was over Kim’s house, her and her mom was eating what looked like peanut butter with shortbread cookies. But I thought it was strange because I never seen anyone eat cookies with peanut butter. But I asked Kim what she was eating and that is when she told me that she was eating “cookie butter”. The first thing I thought was, “How does Kim find all of these different snacks?” The next thing thought that came to mind required me to ask her if I could try some. So I took a shortbread cookie and dipped in the peanut butter looking substance. I didn’t know what to expect, but I wasn’t expecting what I tasted. It was so yummy! It taste like a creamed shortbread cookie!
Lately Trader Joe’s has been my hot spot. Last week went I went to the grocery store I saw the butter and immediately purchased it. I must have stared at the jar for 30 minutes before I finally figure out what I wanted to do with it. Did I want to make a cake? Did I want to make brownies? Did I want to make truffles? Who knows. Instead, I decided to make cookie butter cookies, practically because I liked the way that sounds, and add a bunch of stuff to them. Luckily I had some pecans, toffee pieces, and chocolate chips at home and that is how I cam up with that cookie idea.

Ingredients
- 2 sticks unsalted butter, room temperature
- 1/2 c. sugar
- 1 1/2 c. brown sugar, packed
- 2 eggs, lightly beaten
- 1 tbsp. vanilla extract
- 1 1/2 c. flour
- 1/2 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. salt
- 1 c. cookie butter
- 1 c chocolate chips
- 1 c. toffee pieces
- 1 c. pecans pieces
Instructions
- In a medium sized bowl, beat together the butter and both sugars until creamy. Add the eggs and vanilla extract and continue to beat until well blended.
- Add the flour, baking powder, soda, and salt. Beat until well blended. Add the cookie butter and blend well.
- With a rubber spatula or wooden spoon, stir in the chocolate chip cookies, toffee pieces, and pecans. Place in the refrigerator for 15 minutes or so.
- Line cookie sheet with parchment paper or silicone mat and scoop a medium size portion of the cookie dough onto the sheet well-spaced out.
- Bake for 13 to 15 minutes and turn to cooling rack before serving.
Hi, just checking what temperature the oven should be at. I’m getting ready to put these in the oven and not sure the oven temp so will go with the one on the back of the chocolate chips bag for now. Maybe you have that listed in the recipe and I am just missing it. Haven’t baked them yet but the dough is delicious!!
