When I started my journey baking, I remember making Pineapple Upside Down Cake for the first time. It was a cake that I grew up loving and wanted to learn how to make on my own. The first time I made the cake, it was a fail. However, the second time, it was a win! I was so enthusiastic about my newfound talent that I started making more cakes with an “upside-down” flair.
When trying to develop a recipe for the fall, it only makes me create an upside-down cake that will need no introduction if seen on a dessert table. That is when I decided to make this Upside Down Apple Pecan Cake that is topped with a delicious caramel topping that has sliced apples and chopped pecan pieces. This single-layer cake would be perfect for fall baking.
Apple Upside Down Cake Topping
The topping becomes perfect as the cake is baking. Like most upside-down cakes, the topping is made up of light brown sugar, butter, sliced apples, and chopped pecans. The best part of the upside-down topping is Tony Chachere’s Ham Pecan Glaze. Add a couple of tablespoons to the caramel gives a delicious nutty flavor to the caramelized apples on top.
I know many of you are thinking, “Doesn’t the ham glaze taste like…ham?” My answer is, not at all! The glaze is a bottle caramelized flavor coating that you can use for your ham but can add flavor to other dishes like my Cinnamon Roll Bread Pudding Cupcakes and this recipe. So, if you happen to buy yourself a bottle (which I definitely recommend that you do), go ahead and use this for this easy upside-down apple cake.
Another option for the cake
The cake recipe that I have listed below is simple and easy. However, if you want to get a little more creative and simplify things further, you can absolutely use a box cake mix. A few flavors I would consider if you are going to do that are the following:
- Yellow Cake Mix
- Spice Cake Mix
- Butter Pecan Cake Mix
These flavors would go very well with this cake recipe.

Upside Down Apple Pecan Cake

Ingredients
- 1 stick of butter, unsalted and at room temperature
- 1 c. granulated white sugar
- 3 large eggs
- 1 1/2 c. cake flour
- 1 tsp. Baking powder
- 1/4 tsp. Salt
- 1/2 c. buttermilk
- 1 tsp. Vanilla extract
- 1 1/2 tsp. Apple Pie Spice
- 3/4 c. light brown sugar
- 1/4 c. butter
- 2 tbsp. Pecan Praline Ham Glaze
- 2 apples, sliced
- 1/4 c. pecans, chopped
Instructions
- In a medium bowl, combine the butter and sugar and blend well. Next, add the eggs, one at a time.
- Whisk together the cake flour, baking powder, apple pie spice, and salt in a separate large bowl. Slowly add the flour mixture to the wet mixture using a handheld or standing electric mixer while adding a little of the buttermilk a little at a time. Add the vanilla extract and mix. Set aside.
- In a small saucepan, melt the butter on medium heat. Add the brown sugar and stir until the sugar starts bubbling. Add Tony Chachere’s Pecan Praline Glaze and stir. Once melted, pour the glaze into the cast iron pan, add the sliced apples, and sprinkle with the chopped pecans.
- Next, pour the cake batter on top of the sliced apples. Place in the oven on top of a baking sheet and bake for 35-40 minutes until a toothpick can be inserted and comes out clean and is golden brown. Once the cake has finished baking, allow cooling for about 10-15 minutes. Place a plate on the open side of the pan and flip upside down. Remove skillet and serve as desired. Best served with a scoop of vanilla ice cream.

- If you don’t have access to Tony Chachere’s Pecan and Ham Glaze, you can use Bourbon or Whiskey.
